Beef+Kangaroo jerky

Well its recipe time again.Managed to get hold of some fillet of beef and kangaroo loin from work[the joy of being head chef]
so ive just made my first jerky and it is drying as i type.I tried some of the beef raw with the marinade on and i think this could be a winner
so here goes;
Beef jerky;
500g lean beef fillet[no fat etc]
3 tablespoons worcester sauce
3 tablespoons soy sauce
3 tablespoons hickory smoke bbq sauce
2 teaspoons cajun spices
1 teaspoon salt
1 teaspoon black pepper
a good dash of your favorite chilli sauce,mines habernero so nice and spice
2 tablespoons soft brown sugar
1 crushed garlic clove
mix all together and the n add in the finly sliced beef,cut across the grain for tender jerky.
leave to marinade for 30 mins then into the dryer
Kangaroo jerky
same marinade but with 1 teaspoon ground ginger,and a few crushed juniper berries
i left the kangaroo in the marinade for 6 or so hours just in case it is abit tough
now lets wait and see
